    Banana Chocolate Chip Pancakes with Oatmeal

    Healthy Banana Chocolate Chip Pancakes with Oatmeal, a nuturitious pancake recipe made with homemade oat flour and bananas.

    Just recently my husband and I have been on a banana kick. Chocolate covered bananas, bananas, in cereal, bananas in smoothies, banana yogurt, and even banana frozen yogurt! Then my husband told me he had never had a pancake with banana slices inside.. Say what?! Sometimes I even put strawberries and apples in my pancakes too. He’s never had fruit in a pancake, so I had to remedy that quick!

    You haven’t lived until you have tried banana pancakes. It was a pleasant surprise how well our pancakes turned out using homemade oat flour, it’s a game changer!

    Banana Chocolate Chip Pancakes with Oatmeal

    We put the banana slices right on top of the pancake as we place the batter into the pan. The bananas get nice and warm and the chocolate chips melt. It’s the perfect chocolate banana combination. Sometimes instead of syrup, we’ll enjoy these pancakes with some a drizzle of homemade nut butter to make Chocolate Peanut Butter Banana Pancakes, yum!

    Oatmeal Flour

    How to make oatmeal flour:

    You’ll simply place oatmeal into a high-speed blender and process them. Once they are fully processed you will have homemade oatmeal flour. This is a great way to save money and space since you don’t need to actually buy oatmeal flour.

    Substitute for Buttermilk

    Mix 3/4 cup milk with 1 1/2 tablespoons of vinegar to make a dairy free buttermilk substitute.

    We let the batter sit a little, for about 5 minutes before making to allow the baking powder to do its thing. Once we start seeing it thicken a bit we’ll start cooking the pancake batter to turn it into delicious pancakes!

    Ingredients

    • 1 Cup Oats
    • 1 1/2 Cup Flour
    • 1 Tablespoon Sugar
    • 3 Teaspoons Baking Powder
    • Pinch salt
    • 2 Eggs
    • 1 1/2 Cup milk of choice mixed with vanilla extract + 1TBS vinegar
    • 1 large banana sliced
    • 1 cup Chocolate Chips
    Prevent your screen from going dark

    Instructions

    • In a blender grind the oats until it resembles flour.
    • Mix all the dry ingredients and add in eggs and milk mixture, and chocolate chips, combine.
    • Add the mixture into the batter and stir!
    • Get your pan nice and hot and add a tab of butter to prevent the pancakes from sticking.
    • Place batter in pan and add slices of banana.
    • Once you think your pancake is done - flip it over and let it cook on the opposite side.
    • Once done sprinkle with oats, chocolate chips, bananas, and some good maple syrup!
    • Enjoy!

      Silk has been in so many recipes lately. It’s crazy to think that I only thought Silk was for drinking. I’ve also never seen that you can grind up oats instead of using flour.

        I actually buy oatmeal just to make oat flour! I love using it this way because the oats are too chewy for me as I was never a fan of oatmeal. LOVE using Silk! We use their Coconut milk all the time and now I’m loving this Vanilla in smoothies! πŸ˜€

        I think I see the issue πŸ™ Our recipe plugin pulled an extra amount of milk. We just made this to make sure and it turned out great minus the extra milk, we even updated the photos so you can see how they should look. So sorry about that πŸ™
