Mini Ham and Cheddar Cheese Quiche with Calphalon's Mini Pie Pans

Mini Ham and Cheese Quiche Recipe

Since having the baby when it comes to breakfast I need something fast, delicious, and still nutritious at the same time.  Lately I've been using my Calphalon Mini Pie Pans to make Mini Ham and Cheese Quiche for the hubby for breakfast.  He gets up so early and since he travels about an hour to work it's hard to have something other than cereal unless he wakes up at 4am!  I make 4 of them at a time and freeze 3 and save one in the refrigerator   He can just quickly take them out of the freezer and pop into the toaster while he gets ready.  He really enjoys putting them on a English Muffin.  Smart man.  :)

What I love about using the mini pie pan is that he can put it on a muffin, bagel, or just eat it quickly.  I don't have to cut into it and I can just serve them in portions.  They heat evenly, and I'm so excited to try them out on other things.. Like mini little pies for sweet baby.  They're dishwasher safe, full lifetime warranty, and the nonstick is incredible!  Perfect for the new year with healthy lifestyle changes - by the way I want them to be permanent.  Sweet Baby starts eating the end of this month!  No more junk in this house!

Potatoes and Ham for Mini Ham and Cheese Quiche!

Preheat oven to 350.
In a frying pan on low heat drizzle a little olive oil and cook potatoes and ham just until potatoes start to brown.  Add in the milk and turn off stove.  In a large bowl put eggs, cheddar cheese, potato & ham mixture, and salt and pepper.  Pour into lightly greased mini pie pans and bake.  Bake for 15 minutes or until eggs are slightly browned.   Sprinkle tops with extra cheddar cheese - cool to freeze or serve and enjoy!

  12. I love the photo of the quiches stacked on the plate! I haven't made quiche in forever and I love the idea of making mini ones. I always have problems with the centers being liquid when I make the big ones...
