Air Fryer Chicken Breast covered in a homemade cornflake coating making it juicy and delicious! This Cornflake chicken recipe is a keeper!
Growing up my mom always made cornflake chicken baked in the oven. It was absolutely delicious. That being said, I remember the bottom being soggy! It was from the chicken just sitting on the bottom of the tray. The air fryer completely solves this problem since it forces air all around the food and cooks every part at the same time. Nothing is just sitting flat on a baking sheet.

When you make air fryer boneless chicken breast you really want to use a coating either breading, flour with an oil spray, and cornflake crumb breading being our favorite. You can marinate them like we make our oven baked chicken breast, which is a great alternative since the lemon tenderizes the protein. If you’re not going to put a breading on the chicken we suggest using thinly sliced or slice it into chicken fingers. This way the chicken will cook faster and you won’t end up with dried out chicken.

- 2 cups cornflake cereal
- 1 teaspoon granulated garlic
- 1 teaspoon salt
- 1 teaspoon parsley

If we’re not doing thinly sliced chicken breast we usually use a breading mixture on our chicken cooked in the air fryer. This really helps keep the chicken moist. We first give it a dunk into some eggs, and then into our cornflake mixture. Once it’s breaded you’re ready to place into the air fryer.
Place the chicken onto your air fryer tray and spray with high smoke point oil. Cook the chicken at 375 degrees F for 20 minutes, flipping once in between until the chicken reaches 165 degrees in the thickest part.

We cooked an organic chicken breast for about 20 minutes in the air fryer at 375 degrees F. Organic is are a bit smaller than non-organic in my experience. Always check the temperature of the chicken and make sure it reaches 165 degrees F.
What to serve with air fryer chicken breast?
Serve with your favorite starch and veggie. My family loves this with our air fryer baked potato and oven roasted broccoli and cauliflower.

- You can do this with chicken thighs, or even chicken pieces to make chicken nuggets. The cook times will vary for different pieces of chicken.
- If you do not like cornflake crumbs follow the recipe using bread crumbs or your favorite gluten-free breading.
- Really large cuts of protein may take 25 minutes or 30 minutes, make sure the internal temperature reaches 165 F. We use organic and they’re usually pretty small compared to conventional. Check at the 20 minute mark and see if it needs a few minutes longer.
- Make a large batch of our cornflake crumbs to have for next time and use as much or as little as you need to make this air fryer recipe.

Most recipes are for the tub style air~fryers and I am very sure they don’t cook the same.

I used to make a WW recipe using cornflake crumbs but instead of dipping in egg you spread mayo on the chicken then rolled it. It made it very moist. I wonder if this would work?

I make a similar recipe except I use plain Greek Yogurt instead of egg. It gives me a little more calcium that I need. I salt & pepper the chicken and dredge the chicken in the yogurt, then roll it in the corn flake crumbs. I always sprinkle extra crumbs (I grind my own) on the chicken before baking. I have used this recipe since the 80s and everyone that eats it loves it. My hubby hates yogurt, but he loves this chicken. I’m making some tonight in my air fryer.
