Apple Cinnamon Muffins are a great way to bake with apples. We love the bits of apples in this cinnamon muffins base. You could even make this apple muffin recipe into an apple cake recipe too!

One day I was making my cinnamon streusel muffins and then I noticed the apples we had from apple picking and had the idea, why not make an apple muffin recipe? Who doesn’t love apples and cinnamon? Cinnamon apples are actually a great treat when you have an abundance of apples and I love serving it over some ice cream, but that’s not easy to bring to a friend or family, that’s where these delicious apple cinnamon muffins come int!

When I started making the apple muffin recipe I could smell the aroma of the cinnamon and apples baking in the oven, I couldn’t wait to eat one or two! My entire family devoured this apple muffins recipe and I knew I had to make it again and of course share it with you guys too.

Apple Cinnamon Muffins

Our apple cinnamon muffin recipe is super easy to make. I’m all about dumping everything into one bow, but for this recipe, you’ll need to dirty two bowls as it has a scrumptious streusel topping, don’t worry the extra dirty bowl is absolutely worth it.

Once the apple cinnamon muffins come out of the oven we like to drizzle a little caramel right on top, this is completely optional, but we’re all about this tasty addition. Don’t like caramel? Leave them as is or even try a vanilla glaze if you’d like.

This is a super simple recipe, our Apple Cinnamon muffins are perfect for the fall weather or anytime you’re craving something sweet!

Ingredients

Apple Cinnamon Muffins

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter room temperature
  • 1 cup sugar
  • 2 eggs
  • 2/3 cup milk
  • 2 apples granny smith, diced
  • 1/2 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice

Streusel Topping

  • 1/8 cup rolled oats
  • 1/3 cup sugar
  • 3/4 teaspoon cinnamon
  • 1/4 cup unsalted butter cold, cubed
  • 1/3 cup all-purpose flour

Instructions

  • Preheat oven to 350°F 
  • Cream butter in mixer, then add sugar and continue to beat until light and creamy. 
  • Add eggs and beat another 1-2 minutes. 
  • Add cinnamon, nutmeg, and vanilla. Alternate flour with milk into the mixture. Starting with the flour and ending with the flour.
  • Lightly fold half of the diced apples into the batter. 
  • Take an ice cream scoop and divide into muffin tins about 3/4 full.
  • Place remaining diced apple on top of muffins
  • Mix all ingredients for streusel topping by hand until slightly crumbly. You want a coarse texture.
  • Top muffins with Streusel Topping Bake for 25-30 minutes or until toothpick test comes out clean.
  • Let muffins cool on wire rack for 15-20 minutes.

    the recipe didn’t have enough flavor.. I want more cinnamon.. maybe something else. I’m trying to basically alter a recipe I found and liked but didn’t love 🙂
