Enjoy a scoop of our homemade Caramel Macchiato Coffee Ice Cream! We made it a no cook, no eggs recipe, all you need is a high speed blender and some ice cube trays. It’s creamy and full of flavor with caramel, coffee, and even chocolate chips! Have a fun treat for the next brunch party; they could totally pass for breakfast, because, COFFEE!
We all love creamer with our coffee right? I am a huge fan of coffee and LOVE having a delicious cup of coffee to start the day with a generous amount of International Delight® Caramel Macchiato Creamer or International Delight® Cold Stone Creamery™ Sweet Cream. The new International Delight® Half Gallon Creamer container is much easier to hold and pour. It has slight indents on the side to maker it easier for your hand to grip.
One morning when my coffee got cold I thought “this would taste incredible as an ice cream!”. So that is what I did. I MADE ICE CREAM!
A few things.. I want ice cream, and I don’t want to cook eggs, this is an easy no cook, no eggs recipe. It’s simply freezing, blend, freeze! We first freeze to activate ice crystals. Then once it’s frozen, I scoop it out of the ice cube trays and blend. Blending aerates the ice cream mixture making it creamier, the ideal texture of ice cream. Then after the final freeze, it’s scoopable, creamy, and pure perfection!
I’m a Caramel Macchiato girl, but you could easily use Vanilla or the Cold Stone Creamery™ Sweet Cream! I love the Cold Stone Creamery™ Sweet Cream on its own without coffee; it’s beyond words incredibly delish! I’ve been enjoying it in my morning coffee; it’s like dessert on its own. We serve in chocolate dipped ice cream cones. You simply melt some chocolate chips with a bit of coconut oil and pour right into the cones of your choice. Once the chocolate is hardened you can scoop your ice cream and fill them up!
This recipe is super simple. I get the International Delight® Half Gallon Creamer containers at my local Walmart. It’s the perfect amount so that I can enjoy with my regular coffee and as ice cream.

Caramel Macchiato Coffee Ice Cream
- 3 cups International Delight® Caramel Macchiato Creamer
- 3 teaspoons instant coffee
- 2 tablespoons boiling water
- Pour the creamer into a large bowl.
- Mix the coffee and water.
- Mix coffee with creamer and pour into ice cube trays.
- Once the mixture is frozen blend in a blender until smooth.
- Pour mixture into a freezer safe container and allow to harden.
- Scoop out once it reaches desired texture (soft serve or hard ice cream).
