    Crab Scampi with Capellini

    I love anything with butter. 
    Butter

    That includes starches, and seafood.

    My husband on the other hand is very picky when it comes to seafood.  If it’s not Salmon, shrimp, or tuna he wants no part of it.  Until I made this Crab scampi.
    I was pretty persistent telling my hubby he had to try this.  I couldn’t let him not know the amazing flavors of this scampi.   Let’s just say hubby finished his serving, and he loved it!. 🙂

    On to the recipe:

    Crab Scampi
    recipe adapted from Food.com
    2-3 Servings
    2 Tablespoons Olive Oil
    2 Tablespoons Butter
    4 Cloves Minced Garlic
    1/8 Teaspoon Crushed Red Pepper (I have mine in a mill)
    1 Tablespoon Lemon Juice
    1/4 Cup Chicken Broth
    1/2 lb Crab Meat
    1/2 Teaspoon Parsley
    Salt and Pepper to taste
    1/2 lb Capellini Spaghetti
    In a medium sauce pan bring water to a boil for Capellini, cook and drain.
    In a deep saute pan melt the olive oil, butter, and garlic until slightly bubbling.
    Pan

    Mix in red pepper, lemon, and chicken broth; continue to cook for about 2-3 minutes.

    Crab Claw

    Reduce fire, add in the parsley, crab meat, and salt + pepper to taste.
    Toss in the Capellini and serve.
    Garnish with crushed red pepper, and parsley.

      My husband will not touch seafood, but I love it, and I also love butter. I have never heard of Irish butter, but this dish sounds so yummy that I hope you don’t mind if I steal it to try out on my family this weekend.
