    Everyone loves a good egg sandwich recipe, right? From a fried egg on your buttered English muffin, a runny egg on your toast or some hardboiled eggs mashed into fresh egg salad! We had some leftover hardboiled eggs from Easter recipes we made and we thought what better use other than to make a pretty pink egg sandwich recipe. Our egg salad has fresh and healthy ingredients that make it taste bright and delicious. You’ll get a bit of a crunch from the veggies too!

If you haven’t seen our Avocado Deviled Eggs definitely check that out as well! We made a bit of a mess on camera, but we made beautiful memories in our mind and heart! I’m all about cooking with my kids! It’s truly a passion of mine and I love it so much that we started our Mini Chef Mondays series. She enjoys the series just as much as I do!

    Ingredients

    • 4 hardboiled eggs
    • 1 tablespoon celery chopped
    • 1 1/2 tablespoons red onion chopped
    • 1 tablespoon parsley chopped
    • 1/2 lemon juiced
    • 1/8 cup mayo
    • salt and pepper to taste
    • 4 slices bread
    Prevent your screen from going dark

    Instructions

    • Place the eggs into a large bowl and use a potato smasher to smash them.
    • Add in the remaining ingredients (aside from bread) and mix together.
    • Place onto bread, slice into desired shape and enjoy!

      I love the add ins you used in the egg salad recipe. I am just used to using a basic recipe. I will have to try this.
