We love making homemade pancakes for breakfast, and this is a fun way to switch things up from our usual fresh milled flour pancakes using soft white wheat. With simple pantry ingredients and freshly milled einkorn wheat berries, you can make a delicious homemade breakfast the whole family will love.

Einkorn has a naturally golden color and a slightly sweet, nutty flavor, making it perfect for pancakes. It’s one of the oldest cultivated wheat varieties, and it behaves a little differently than the modern wheat we typically use. I love how much flavor it adds without needing anything fancy!

Letting the batter rest before cooking helps the flour hydrate and gives the pancakes a nice, tender texture. They’re especially delicious served warm with butter and a drizzle of maple syrup!

Einkorn Pancake Recipe Ingredients

Einkorn wheat berries: We’re using freshly milled einkorn flour for this recipe! Einkorn has a naturally sweet, nutty flavor and a beautiful golden color. Mill your wheat berries on a fine setting for the best texture. Einkorn absorbs liquid differently than soft white wheat, so you may need to adjust the milk slightly after resting the batter.
Ground cinnamon: Just a little cinnamon adds warmth and flavor to these pancakes. You can leave it out if you prefer a classic pancake flavor.
Baking powder: This helps our pancakes rise and gives them a fluffy texture. Make sure your baking powder is fresh!
Baking soda: Works with the acidity from the vinegar to help the pancakes rise and brown nicely.
Granulated sugar: Adds a little sweetness and helps the pancakes develop a beautiful golden color. You can reduce it slightly if you prefer less sweet pancakes.
Salt: A little salt balances the sweetness and brings out the Einkorn’s nutty flavor.
Milk: Whole milk, 2%, or even 1% work well. You can also use an unsweetened dairy free milk if needed.
Vinegar: We’re adding vinegar to the milk to make a quick buttermilk style mixture. White vinegar or apple cider vinegar works well. You can also use regular buttermilk instead of the milk and vinegar.
Vanilla extract: Adds a delicious vanilla flavor that pairs perfectly with the cinnamon and einkorn flour.
Eggs: Two large eggs help hold the pancakes together, add structure, and keep them tender.
Avocado oil: Adds moisture and keeps the pancakes tender without a strong flavor. You can also use melted butter or another neutral oil.

Storing and Reheating (If There’s Any Leftovers!)

Refrigerate: Store cooled pancakes in an airtight container in the refrigerator for up to 3 days.
Freeze: Place cooled pancakes in a single layer on a baking sheet and freeze until firm. Transfer to a freezer-safe bag or airtight container and freeze for up to 2 months.
Reheat: Reheat pancakes in the toaster, skillet, or microwave until warmed through.

Recipe Tips and Notes

  • Weigh your wheat berries: Measuring 375 g of einkorn berries before milling makes it easy to get consistent results. I like to add a few grams extra, about 1-2 for my KoMo and 5-10 more for my Wondermill, because some flour is lost during milling.
  • Mill the flour finely: A fine grind helps create softer pancakes without a coarse texture.
  • Avoid overmixing: Overmixed pancake batter will not be as fluffy and can even be a bit rubbery!
  • Let the batter rest: Give the batter the full 15-20 minutes so the freshly milled flour has time to hydrate.
  • Check the consistency: The batter should be thick but scoopable and spreadable. Add a little milk if it becomes too thick after resting.
  • Use fresh baking powder: Fresh leavening helps the pancakes rise and gives them a fluffy texture.
  • Watch the heat: Medium heat works well, but lower it if the pancakes brown before the centers cook.
  • Don’t press the pancakes: Avoid pressing down with your spatula after flipping. This can make them less fluffy.
  • Add your favorite mix-ins: Sprinkle blueberries or mini chocolate chips onto each pancake after adding the batter to the skillet.
  • Freeze extra pancakes: Make a batch for the freezer, so you have an easy homemade breakfast ready for busy mornings.

Instructions

  • Mill your Einkorn wheat berries.
    375 g Einkorn wheat berries
  • Combine the dry ingredients together. The freshly milled einkorn flour, cinnamon, baking powder, baking soda, sugar, and salt until evenly combined.
1 teaspoon ground cinnamon, 2 tablespoons baking powder, 50 g granulated sugar, 1/2 teaspoon salt, 1/4 teaspoon baking soda
  • In a separate bowl, combine the wet ingredients. Combine the milk and vinegar and let it sit for 5 minutes to create a buttermilk-style mixture.
    480 g milk, 22 g vinegar
  • Now add the remaining wet ingredients, vanilla, eggs, and avocado oil, to the milk mixture and whisk until smooth.
    15 g vanilla extract, 2 large eggs, 28 g avocado oil
  • Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix.
  • Let the batter rest for 15-20 minutes so the fresh milled flour hydrates and the batter thickens slightly.
  • Heat a skillet or griddle over medium heat and lightly grease with oil.
  • Scoop 1/3 cup batter onto the skillet for each pancake.
  • Cook for 2-3 minutes until bubbles form and edges begin to set.
  • Flip and cook another 2-3 minutes until golden brown and cooked through.
  • Remove from the skillet and repeat with remaining batter. Serve warm.
