    During the summer, we always look forward to tons of time together. Spending time outside and then cooling off with a frozen treat!

    For years I’ve been making trifle cupcakes, and they are SO good. However, when it’s hot, you want something cold, like ICE CREAM CUPCAKES! These are the perfect treat for National Ice Cream Month.

    Our Ice Cream Cupcakes are perfect for parties or just a fun treat for the kids to make. We make our chocolate cups in advance and then you can enjoy with a scoop of ice cream and your favorite toppings!

    With these cupcakes, the kids will be saying you’re the coolest mom ever!

    I found Breyers 2-in-1’s at my local ACME and they make the perfect scoops for our chocolate cups.

    WHY BREYERS ICE CREAM?

    We love Breyers. It’s rich and creamy, the perfect texture, and nearly everyone loves it! They even make dairy-free ice cream. It’s a brand I grew up eating, my personal favorite has always been their mint chocolate chip. We enjoy all of their flavors, even just vanilla, which is fun where you can make your own flavor up like our Banana Split Ice Cream.

    HOW TO MAKE ICE CREAM CUPCAKES

    1. Pick out your ice cream options, we went with 2 options but with Breyer’s 2-in-1 it’s like 4 options!.
    2. Let the ice cream sit out for about 5 minutes to make it easier to scoop.
    3. Scoop the ice cream into chocolate cups.
    4. Prep the magic shell sauce that hardens as it hits the ice cream by melting coconut oil and chocolate together.
    5. Top with your desired toppings and enjoy!
