    This simple egg salad recipe is a kid friendly recipe that the whole family will enjoy. We use our steamed hard boiled eggs and our homemade Easter egg dye to make it colorful and fun! Make this basic egg salad with or without the fun real food coloring.

    Simple Egg Salad Recipe MADE FUN!

    My daughter loves colorful food, but we all know that food dye isn’t something we want in our diet. I’m not saying we don’t eat food dye, because we do eat some stuff with it, but we definitely try to limit our intake of it and we definitely don’t dye our food with food dye. We do dye our food with real food dye!

    We made some fun Homemade Easter Egg Dye and then we had some leftover eggs so we figured we make a simple egg salad recipe with our pastel hard boiled eggs. (we had so much fun dyeing Easter eggs!)

    Kay wanted to keep dipping them into the natural food dye we made so I let her have at it with 2 dozen eggs. We had enough eggs to make our avocado deviled eggs, this simple egg salad recipe, and of course some hard boiled eggs for snacking.

    My husband personally likes to take the blue to work. My daughter loves the pink and purple and my favorite color is yellow, so the yellow is usually mine.

    Here in our house we like to make food FUN! We make our basic egg salad a little more fun by using REAL food dye that we made.

It mashed the eggs up perfectly without much effort.
    I use my potato masher for everything from guacamole, ground beef, to egg salad. If you need to smash or mash something you can use this to make it quickly.
    You could use any potato masher, but over the years I’ve owned my fair share and this one is by far my favorite. I have two of them. Kay’s only complaint? It’s not pink. 😉

    Egg salad always has been boring to me when my mom made it growing up. My mom would make it with just salt, pepper, eggs, and mayo.

    I love adding fresh herbs to egg salad as well as lemon. The lemon really gives it a bright and refreshing note which our family really enjoys. I also add in finely chopped onion which gives it another flavor note. We love

    We love the flavor and this simple egg salad is full of it, while still being simple enough for you to make with some leftover hard boiled eggs.

    If you want you could even add in some bacon. We like to enjoy this with some crackers or salted pretzels, but if I was eating for breakfast I’d enjoy on some toast with crumbled bacon, because delicious!

    We make our simple egg salad recipe without mustard but you can definitely add it if you’d like.

    • 10 Hard Boiled Eggs
    • 1 Tablespoon Fresh Parsley , chopped
    • 1/8 Cup Onion , chopped
    • 1 Tablespoon Fresh Lemon Juice
    • 2-3 Tablespoons Mayo
    • Salt + Pepper to taste
    Prevent your screen from going dark

    Instructions

    • Mash the eggs using a potato masher.
    • Add in the remaining ingredients and mix together.
    • Serve and enjoy!

      This recipe is very good made with mashed eggs, not mashed potatoes, haha. Hmmm, it might be good with potatoes though…
