Our Slow Cooker Boneless Chicken Thighs recipe delivers tender, juicy chicken in a sweet and savory glaze. Serve over rice with a green veggie for an easy weeknight dinner!

Boneless, skinless chicken thighs are one of my favorite proteins for slow cooking. They’re naturally more flavorful and juicy than chicken breasts as they’re dark meat, and they hold up well during long cooking times without drying out.

This makes them ideal for soaking up all the delicious seasoning in this recipe. This also goes for air frying, baking, etc. They retain moisture even when slightly going over the cook time.

Slow Cooker Chicken Thigh Ingredients
- Brown sugar: This adds sweetness and helps create a caramelized glaze.
- Granulated garlic: Provides a mild, savory garlic flavor. Do not use powdered garlic.
- Kosher salt: You can use less salt if preferred.
- Dried parsley: Adds a subtle herby taste and a pop of color.
- Boneless, skinless chicken thighs: Tender and juicy, perfect for slow cooking! They literally fall apart.
- Cornstarch: This is used to thicken the sauce, mixed with a bit of cold water. Don’t use the liquid in the crockpot as it may clump up when mixed.
How to Make Slow Cooker Chicken Thighs
Add the brown sugar, granulated garlic, kosher salt, and dried parsley to your slow cooker. Mix the seasoning ingredients thoroughly.

Place the chicken thighs in the slow cooker, turning them to ensure they are evenly coated with the seasoning mixture.

Cook on low for 4 hours.

To thicken the sauce you can use 1 tablespoon of cornstarch mixed with 1 tablespoon of cold water. Then mix it into the chicken in the crockpot once the 4 hours are up.

Cook it on high for 15-20 minutes with the lid on the crockpot.

You can also thicken it up on the stove by draining the liquid.

Recipe tips and alterations
- You can pair with rice, mashed potatoes, or pasta. Don’t forget the veggies!
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheating: Reheat gently in the microwave or on the stovetop with a splash of water or broth to keep the chicken moist while reheating.
- Alterations: You can use bone-in chicken thighs but you’ll need to add an hour to the cook time.

Ingredients
- 1/3 cup brown sugar packed
- 1 teaspoon granulated garlic
- 1 teaspoon kosher salt
- 1/2 teaspoon parsley
- 6 boneless skinless chicken thighs
- 1 tablespoon cornstarch mixed with 1 tablespoon water, to create slurry – optional
Instructions
- Add all ingredients except the chicken thighs to your slow cooker.1/3 cup brown sugar, 1 teaspoon granulated garlic, 1 teaspoon kosher salt, 1/2 teaspoon parsley
- Mix the seasoning ingredients well.
- Add the chicken thighs and mix them around in the seasoning and sugar mixture.6 boneless skinless chicken thighs
- Once fully coated, place the chicken thighs flat on the bottom of the slow cooker.
- Cook on low for 4 hours.
- Once cooked, serve as desired.
- To thicken the sauce, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water. Once the 4 hours of cooking are done, stir this mixture into the chicken in the crockpot. Cover and cook on high for an additional 15-20 minutes. Alternatively, you can drain the liquid and thicken it on the stove for a quicker result.

Can you use bone in chicken thighs with skin on?
You could, but you’d need to adjust the time and it wouldn’t have the same result. We prefer skinless and boneless for this.
