    The fall weather is coming, and I cannot wait. That means it’s time to bust out the Crock-Pot®  slow cooker and start making delicious slow cooker recipes! When it comes to fall, I love to create savory meals, creamy with fresh herbs right at the end. I love to use my slow cooker weekly year-round to make bone broth. I can use the broth for so many recipes, and it even freezes well! I’ll be sharing that recipe soon too. 🙂

    Today I’m so excited to share our Creamy Slow Cooker Chicken with Mushrooms and Artichokes. I love the flavor combination of mushrooms, artichokes, and parmesan cheese. My favorite way to serve this slow cooker chicken recipe is over pasta, but you could serve over mashed potatoes or even rice.

    I know some don’t like to use cream of anything soups, so you could easily make homemade, or now you can even find them in organic varieties that are packaged in BPA-free cartons.

    I remember the first time I used a slow cooker. I was like “this is incredible, just dump it all, dinner in 5 hours!”. My goto was chopped tomatoes, carrots, potatoes, seasonings and chicken. I’d serve that over rice, and it was delicious. Now I’m even more adventurous with flavors and making meals that I would usually cook on or in the stove.

    One of the many reasons I use the slow cooker is so I don’t heat up the house in the summer, and I don’t have to muss and fuss with cooking all day in the winter. I love that I can make anything from appetizers, breakfasts, dinners or even desserts in my slow cooker. 🙂

    Every time I toss something into my slow cooker; I know I’m creating something delicious and nutritious for my family. I had a simple Crock-Pot® slow cooker that I scored on Black Friday for like $30, and now I really love the new Crock-Pot® slow cooker I was sent. The programmable lift & serve is so convenient for just cooking meals for my family and especially entertaining. Usually, I’d fumble with the lid on my old one and this one just props it up and you don’t have to set it anywhere! I know what I’ll be gifting this holiday season. 🙂

    So now on to our recipe! This recipe is inspired by a restaurant dish that I LOVE! The sauce was obviously filled with heavy cream, butter, and tons of parmesan. All of those ingredients are delicious, but we didn’t use the heavy cream or butter and instead used the cream of chicken soup. It’s such a simple recipe that you can prepare in the morning and have cooked to perfection when you come home from work. My family devours it and my daughter loves the sauce with her pasta so I make sure there’s always plenty. If we have leftovers I’ll even add in some cooked broccoli the next night.

    Ingredients

    • 4 chicken breasts
    • 1 bar of cream cheese , softened
    • 1/2 cup parmesan cheese
    • 12 oz cream of chicken soup
    • 2 cups sliced baby bella mushrooms
    • 14 oz frozen artichoke hearts
    • 1/2 cup chicken broth
    Prevent your screen from going dark

    Instructions

    • Place chicken into the slow cooker.
    • Combine cream cheese, parmesan cheese, and cream of chicken soup.
    • Pour mixture over chicken breasts.
    • Top with mushrooms, artichoke hearts, chicken broth, and pepper.
    • Mix to combine and then cook on low for 6-8 hours or high 3-4 hours.
    • Enjoy over pasta, rice, or even potatoes!
